How to store

Room Temperature: For buns you plan to enjoy within a day or two, storing them at room temperature is perfectly fine. Place them in an airtight container or wrap them tightly in plastic wrap to prevent them from drying out. Avoid direct sunlight, as this can accelerate drying.

Refrigerator: If you plan to enjoy your cinnamon buns within a week, the refrigerator is a great option. Let the buns cool completely first, then transfer them to an airtight container. The cooler temperature will slow down the growth of bacteria and keep them moist for longer.

Freezer: Got a craving for a warm cinnamon bun days later? No problem! Freeze your buns for longer-term storage. Once cool, place them in a single layer in a covered baking dish for up to a month. Please note: I would recommend frosting the buns after they thaw.

Reheating:

  • Room Temperature: For buns stored at room temperature or refrigerated, simply wrap them in a paper towel or aluminum foil and reheat in a preheated oven at 350°F (175°C) for 5-10 minutes, or until warmed through.
  • Frozen: To reheat frozen buns, preheat your oven to 350°F (175°C). Thaw the frozen buns in the refrigerator overnight for best results. Alternatively, you can place them directly from the freezer into the preheated oven, but it will take a bit longer (around 15-20 minutes) for them to warm through. Please note: Again, I recommend that you frost the buns after they are thawed and cooled down a bit, so they are warm and not hot, when you frost them.

Ingredients
  

Dough

  • 1 cup warm milk not hot
  • 2 1/4 tsp. active dry yeast
  • 1/3 cup melted salted butter warm
  • 2 eggs
  • 4 cups sugar

Filling

  • 1 cup brown sugar
  • 3 tbsp cinnamon
  • 1/3 cup salted butter softened

Cream Cheese Frosting

  • 6 tbsp salted butter softened
  • 1/2 cup cream cheese room temperature
  • 1 1/4 cup icing sugar confectioner's sugar
  • 1/2 tsp vanilla

Instructions
 

  • In a microwave-safe bowl, warm the milk for 45 seconds, or until lukewarm (not hot). Stir in the sugar until it dissolves completely. Add the yeast and let the mixture stand for 5 minutes, or until the yeast becomes frothy and active.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, sugar, eggs, and salt. Mix on low speed until just combined.
  • Switch the paddle attachment for the dough hook. With the mixer on low speed, slowly pour in the activated yeast mixture. Gradually add the flour and mix on low speed until a shaggy dough forms. Increase the speed to medium and knead the dough for 5-7 minutes, or until the dough comes together smoothly and pulls away cleanly from the sides of the bowl.
  • Lightly grease a large bowl. Transfer the dough to the greased bowl, turning to coat it with oil. Cover the bowl with plastic wrap and place it in a warm spot for 1 hour, or until doubled in size.
  • Combine brown sugar and cinnamon in a bowl. Set aside.
  • If you haven't done so already, leave cream cheese out on countertop so it has warmed to room temperature for when you are ready to make the frosting.
  • Lightly flour countertop with flour. Punch down dough, roll out into a rectangle shape, approximately 16×12 inches.
  • Melt butter in microwave and spread onto rolled out dough with a pastry brush.
  • Pour cinnamon sugar mixture evenly on top of the butter.
  • Roll the dough with your hands, from the bottom to the top, until it is completely rolled up into a sausage like form. With a sharp knife, cut dough into about 15 equal sized pieces.
  • Grease 9×13 baking dish. Set rolls into greased dish, cover with plastic wrap, and put in warm place to rise another 30 minutes, or until they have doubled in size.
  • Preheat oven to 350 degrees.
  • Bake cinnamon buns 20 minutes or until they are golden brown.
  • Put cream cheese, salted butter, powdered sugar, and vanilla into a mixing bowl and mix with hand mixer, until light and fluffy, approximately 3-4 minutes.
  • When the rolls have cooled, spread with cream cheese frosting. Enjoy!

Notes

  • Warm Milk Matters: Use warm milk (around 105°F to 115°F) for activating the yeast. Milk that’s too hot will kill the yeast, preventing the dough from rising properly. Conversely, milk that’s too cold won’t activate the yeast effectively, leading to a slow rise or even no rise at all.
  • Knead for Smooth Dough: Pay attention to kneading the dough. Aim for a smooth and elastic dough that pulls away cleanly from the sides of the bowl. Proper kneading develops the gluten in the flour, which contributes to the structure and chewiness of the final buns.
  • Don’t Skip the First Rise: Give your dough ample time for its first rise. A warm, draft-free spot is ideal. The dough should double in size, which can take anywhere from 1 to 1 ½ hours.
  • Flour is Your Friend, But Use it Wisely: When rolling out the dough, use a light dusting of flour to prevent sticking. However, be mindful of adding too much flour as it can make the buns dry and tough.
  • Spread the Filling Evenly: When spreading the cinnamon sugar filling, aim for a consistent layer over the dough. This ensures each bite has the perfect balance of sweet dough and flavorful filling.
  • Cut with Confidence: Use a sharp knife to cut the dough log into even slices. This ensures all the buns bake evenly.
  • Space Out the Buns: Don’t crowd the buns in the baking dish. Leave a little space between them to allow for proper rising during the second rise before baking.
  • Frosting Fun: Don’t frost your buns while they’re still hot! Let them cool slightly to lukewarm before spreading the frosting. This prevents the frosting from melting and becoming too runny.
