Ingredients Used

  • Herb and Garlic Cream Cheese: The creamy base of our filling. Brick-style cream cheese works best for this recipe, but feel free to choose your favorite herb and garlic variety.
  • Canned Crab Meat: Use high-quality canned crab meat for convenience and for the best outcome.
  • Panko Breadcrumbs: For an extra textural contrast and a touch of golden-brown beauty, consider topping your mushrooms with panko breadcrumbs. While this step is optional, it adds a delightful crunch and enhances the visual appeal of the dish. Panko’s light and airy texture complements the creamy filling without becoming soggy, making each bite a textural celebration.
  • Fresh Parsley (for Garnish): A sprinkle of fresh parsley adds a vibrant pop of color and a touch of freshness to the finished dish.

Substitutions/Alterations

Mushrooms: While white button mushrooms are a classic choice, feel free to experiment with different mushroom varieties. Cremini mushrooms (baby portobellos) offer a slightly meatier texture, while portobello mushrooms can be used for a larger, more substantial bite.

Seafood: Feeling adventurous? Combine crab meat with other cooked and flaked seafood like shrimp or scallops for a seafood medley filling. For a luxurious twist, consider using lobster meat instead of crab meat. Lobster offers a similar sweetness but with a slightly different texture.

Dairy-Free: For a dairy-free alternative, use vegan cream cheese in place of the herb and garlic cream cheese. Choose a brand that has a firm texture for the best results.

Lighter option: If you’re looking for a lighter option, substitute half of the cream cheese with ricotta cheese, ricotta adds a touch of creaminess while reducing the overall fat content, or you may use a low fat cream cheese.

Spice: Add a pinch of cayenne pepper or a sprinkle of red pepper flakes to the cream cheese mixture for a touch of heat.

Herbs: Fresh herbs like chopped chives, tarragon, or dill can add a delightful layer of flavor to the filling.

Extra Cheese: Incorporate some shredded parmesan cheese or crumbled blue cheese into the cream cheese mixture for an extra cheesy punch.

Panko Bread Crumbs: You can omit using the crumbs all together if you don’t have them on hand or you are looking for a gluten free or low carb option.

Perfect Pairings

These decadent Stuffed Crab and Cream Cheese Mushrooms are a delightful appetizer that deserves equally delicious pairings! Here are some ideas to elevate your culinary experience:

Drinks: A crisp glass of sparkling wine, like Prosecco or Champagne, complements the richness of the cream cheese and highlights the delicate crab flavor. The bubbles help cut through the creaminess, creating a refreshing counterpoint. If you prefer still wines, choose a light-bodied white wine like Sauvignon Blanc or Pinot Grigio. These wines have a nice acidity that balances the richness of the dish and enhance the seafood flavors. For a more adventurous pairing, consider a rosé wine. A dry rosé with notes of berries can complement the creaminess and offer a touch of sweetness that cuts through the richness.

Greens: A simple side salad with a light vinaigrette dressing provides a refreshing contrast to the creaminess of the stuffed mushrooms.

Vegetables: Roasted vegetables like asparagus, Brussels sprouts, or bell peppers add a delightful freshness and a pop of color to the plate.

Bread: A basket of warm, crusty bread is a classic pairing that allows guests to mop up any leftover creamy filling.

Surf and Turf: If you’re planning a larger meal, these Crab and Cream Cheese Stuffed Mushrooms can serve as a delightful appetizer before a main course of grilled steak, pan-seared scallops, or baked salmon.

Pasta: A lighter pasta dish like a primavera or pesto can follow the mushrooms for a complete and satisfying meal. You could also serve these with Mac and Cheese recipe!

Servings 12 mushroom caps

Equipment

  • baking dish
  • mixing bowl to mix ingredients
  • spoon to fill mushrooms

Ingredients

  • 12 white button or cremini mushrooms cleaned and bottoms removed
  • 1 package herb & garlic cream cheese Philadelphia
  • 170 grams canned crab meat
  • 2 tbsp panko bread crumbs (optional)
  • parsley for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Wash and dry the mushrooms thoroughly. Gently twist and remove the stems from each mushroom cap. Using a spoon, carefully scrape out the gills from the underside of the caps to create a hollow space for the filling.
  • For added flavor, brush the inside of each mushroom cap with a touch of olive oil and season lightly with salt and pepper.
  • In a medium bowl, combine the softened herb and garlic cream cheese and the flaked crab meat. Using a spoon, mix well until evenly incorporated.
  • Generously fill each mushroom cap with the crab and cream cheese mixture. Don't overstuff, as the filling will expand slightly while baking.
  • For a delightful crispy topping, spread the panko breadcrumbs onto a plate. Carefully press the top of each stuffed mushroom cap into the breadcrumbs, coating the filling evenly.
  • Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly.
  • Remove the mushrooms from the oven and let them cool slightly before serving. Garnish with a sprinkle of fresh parsley, if desired.

Notes

  • For a richer flavor, use jumbo or extra-large button mushrooms or cremini mushrooms for this recipe.
  • If your cream cheese is too firm, soften it in the microwave for a few seconds at low power until softened but not melted.
  • Don’t overcook the mushrooms, as they can become soggy.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
