Ingredients
  

  • 1 lb. unsalted butter, softened 4 sticks
  • 2 cups granulated white sugar
  • 1 egg
  • 4 cups all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. cardamom

Instructions
 

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a stand mixer, cream together the softened butter and sugar until light and fluffy. Note: You can also use a hand mixer.
  • Beat in the egg until well combined. Scrape down the sides of the bowl with a rubber spatula as needed.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cardamom, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing, which can make the cookies tough.
  • Roll the dough into one-inch balls. Place the dough balls on the prepared baking sheets, leaving a few inches of space between them for spreading.
  • Using a fork, gently press a crisscross pattern onto the top of each dough ball. Note: You can just press down once on each cookie if you would like.
  • Bake for 15 minutes, or until the edges are golden brown and the centers are just set.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
