  • Margarine: Melted margarine helps to thin the chocolate and create a smooth, pourable topping. You can also use butter here if desired.

How to store

My Grandmas method of choice was to refrigerate or freeze these squares for later. Here is a few ideas on how to maximize the freshness of these squares:

Room Temperature (Short Term): If you plan to enjoy the bars within 1-2 days, you can store them at room temperature in an airtight container. This will keep them fresh and retain their texture.

Refrigerator (Medium Term): For storage lasting up to a week, the refrigerator is your best bet. Wrap the bars tightly in plastic wrap or store them in an airtight container to prevent them from drying out or absorbing any unwanted fridge odors. Once you’re ready to enjoy a bar, let it sit at room temperature for a few minutes to soften slightly.

Freezer (Long Term): For longer storage, up to 3 months, the freezer is the way to go. Allow the bars to cool completely, then wrap them individually in plastic wrap or store them in a single layer in a freezer-safe container with parchment paper between layers to prevent them from sticking together. Thaw frozen bars in the refrigerator overnight before serving.

You can either fold in about ½ cup of finely chopped nuts (such as peanuts, pecans, or almonds) into the cooled caramel center before adding the chocolate, or sprinkle them over the warm chocolate topping for a nice visual touch.
  • Festive Fun: Feeling festive? Get creative and decorate the tops of the bars with colorful sprinkles! This is a fun way to add a playful touch and make them perfect for birthday parties or other celebrations.
  • Chocolate Chunk Surprise: Love chocolate? Instead of a smooth chocolate topping, consider using chopped Skor bars or another favorite chocolate candy bar. Fold the chopped candy (about ½ cup) into the melted chocolate for the topping, creating a delicious surprise in every bite.

Ingredient Substitutions:

  • Margarine for butter: Don’t have margarine? No problem! You can substitute unsalted butter for the margarine in a 1:1 ratio throughout the recipe. For a dairy-free option, some vegan butter alternatives may also work, however, the results may vary slightly.
  • Chocolate Variations: The semi-sweet chocolate chips in the topping offer a delightful canvas for exploration. Consider using milk chocolate chips for a sweeter finish, or delve into a more sophisticated flavor profile with bittersweet chocolate chips.
  • Caramel Tweaks: Want a deeper caramel flavor? Substitute dark brown sugar for the light brown sugar in the caramel center. This will create a richer and slightly more intense caramel taste.

Ingredients
  

Base

  • 1/2 cup margarine plus 2 tbsp.
  • 1/4 cup white sugar
  • 1 1/4 cups all purpose flour

Caramel Filling

  • 1/2 cup light brown sugar you can also use dark brown sugar
  • 1/2 cup margarine
  • 2 tbsp. corn syrup
  • 1/2 cup Eagle Brand Milk

Chocolate Topping

  • 1 cup semi sweet chocolate chips
  • 2 tbsp. margarine

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Grease 9-inch square baking pan with butter or cooking spray.
  • In a large bowl, combine the margarine, sugar, and flour using a pastry cutter, a fork, or your fingertips. Work the mixture together until it resembles coarse crumbs with pea-sized pieces of butter.
  • Press the crumb mixture evenly into the prepared baking pan. Use your fingers or the back of a spoon to gently pack it down to create a firm and even layer.
  • In a double boiler (or a heat-resistant bowl set over a saucepan filled with simmering water), combine the brown sugar, margarine, corn syrup, and sweetened condensed milk. Heat the mixture over medium heat, stirring constantly, until it comes to a boil. Be sure to keep a watchful eye as caramel can burn easily.
  • Once boiling, continue to stir constantly for 5 minutes. This allows the sugar to fully dissolve and the caramel to thicken slightly.
  • Remove the hot caramel mixture from the heat and carefully pour it over the prepared shortbread crust in the baking pan. The caramel will spread out naturally, but you can gently nudge it with a spoon to ensure even coverage.
  • Carefully place the baking pan with the caramel layer in the refrigerator and let it chill for at least 2 hours, or until the caramel has completely set. This ensures the caramel has a nice chewy texture and provides a stable base for the chocolate topping.
  • Once the filling has cooled, in a small saucepan over low heat, melt the chocolate chips and margarine together, stirring frequently until smooth and well combined.
  • Remove the chilled pan from the refrigerator and carefully pour the melted chocolate over the caramel layer. Use a spatula to spread the chocolate evenly for a beautiful finish.
  • Place the pan back in the refrigerator and let it chill for at least 30 minutes, or until the chocolate topping has completely set. This will ensure the bars are nice and firm for cutting and clean slices.
  • Once the chocolate has set, take your caramel toffee bar out of the refrigerator and cut it into squares of your desired size. I usually cut into 24 squares. Enjoy!

Notes

  • When making substitutions, it’s always a good idea to start with small changes and taste as you go. This allows you to fine-tune the recipe to your exact preferences.
  • For easier removal of the bars, consider lining the bottom of your baking pan with parchment paper before adding the crust. Leave a slight overhang on two opposite sides to create a “sling” for lifting the bars out of the pan after they’ve set.
  • Keep a watchful eye on the crust as it bakes. You want it to be golden brown and slightly firm to the touch, but not dry or crumbly.
  • Letting the caramel filling cool slightly before pouring it over the crust helps prevent it from melting the butter in the crust and creating a greasy layer.
  • If your caramel seems too thin after boiling, you can continue to simmer it for a few extra minutes, stirring constantly, until it reaches a thicker consistency. However, be careful not to overcook it, as this can make it hard and brittle.
