Ingredients
  

  • 6 Large Russet Potatoes
  • 2 tsp. Sea Salt more or less to preference
  • 2 tsp. Smoked Paprika more or less to preference
  • Canola Oil fill to the recommendations of your deep fryer

Instructions
 

  • Fill your deep fryer with oil, reaching the recommended fill line. Heat the oil to 375°F (190°C).
  • Working with one potato at a time, use a sharp knife to carefully cut the potato into a thin spiral slice. Aim for even, consistent thickness for even cooking.
  • Thread the potato spirals onto a bamboo skewer, gently spreading the spiral out to create a loose, spiral-like shape. This ensures even crisping. Repeat with each potato spiral, making sure they don't touch each other.
  • Use a knife or kitchen shears to trim the excess bamboo skewer so it fits comfortably in your deep fryer basket. Remember, you only want to cook 3-4 potatoes at a time to avoid overcrowding and ensure even cooking.
  • Carefully lower the skewered potatoes into the hot oil. Fry for 8 minutes, using tongs to gently turn them occasionally for even browning.
  • Once golden brown and crispy, remove the potatoes from the oil using tongs and transfer them to a plate lined with paper towels to drain excess oil. Repeat steps 4-6 with the remaining potato spirals.
  • Let the potatoes rest for a few minutes while you cook the remaining batches. Once all the potatoes have had their first fry, it's time for a double-fry for ultimate crispness! Carefully lower the potatoes back into the hot oil (a few at a time). Fry for an additional 2 minutes, or until they are an even deeper golden brown.
