  • Large pot for boiling potatoes
  • Vegetable Peeler

Ingredients
  

  • 2 lb. russet potatoes rinsed and peeled
  • 4 cloves of garlic
  • 1/4 cup warm heavy cream
  • 1/4 cup cream cheese
  • 2 tbsp. salted butter
  • 1/4 cup parmesan cheese grated
  • 1/2 cup sharp cheddar white or orange
  • salt & pepper to taste

Instructions
 

  • Wash and peel the russet potatoes. Cut them into 1-inch cubes.
  • Fill a large pot with cold water and add the potato cubes and minced garlic.
  • Bring the pot to a boil over high heat. Once boiling, reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes in a colander. Tip: Reserve about ½ cup of the cooking water to adjust the consistency of the mashed potatoes later.
  • Return the drained potatoes back to the pot.
  • Mash the potatoes with a potato masher or a hand mixer until mostly smooth.
  • While the potatoes are hot, add the warm heavy cream, cream cheese, shredded parmesan cheese, and shredded cheddar cheese.
  • Season with salt and pepper to taste.
  • Use a large spoon or spatula to fold and mix the ingredients together until well combined and the cheeses are melted. If the mixture seems dry, add a little of the reserved cooking water, one tablespoon at a time, until you reach your desired creamy consistency.
  • Taste and adjust seasonings as needed. Serve immediately while hot. Enjoy!

Notes

Optional Step: Broiled Cheese Topping
  • Preheat your broiler to high.
  • Transfer the mashed potatoes to an oven-safe dish (optional).
  • Sprinkle with additional shredded cheese (optional).
  • Broil for 2-3 minutes, or until the cheese is melted and bubbly.
