Ingredients
- 1/2 cup butter
- 1/4 cup brown sugar
- 1 cup flour
- 1 egg
- 1/2 cup jam
- 1/2 cup chopped nuts
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In stand mixer, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg yolk.
- Separate the egg white from the yolk, add yolk to the creamed mixture and set aside the egg white in a small bowl.
- Add flour to the creamed mixture, mix egg yolk and flour with the creamed mixture, until combined.
- Slightly beat the egg white. Roll dough into balls and dip them into egg white. Dip them into finely chopped nuts and place on baking sheet. Press down the centers slightly with your thumb (or a small measuring spoon).
- Bake in oven for 5 minutes, remove from oven, press down centers again, put back into oven for another 10 minutes.
- After the cookies have slightly cooled, put the jam into the centers. Enjoy!
