Watching her slice them with practiced ease, the anticipation would build. Then, the best part – a mischievous glint in her eye, she’d “accidentally” swipe a corner piece, savoring the crumbly oatmeal crown and the gooey, sweet date filling clinging to the bottom of the pan. Not a crumb was wasted in her kitchen, and that, perhaps, was the sweetest lesson of all.

This recipe is a tribute to Grandma and her love for this simple yet irresistible dessert. Ingredients Used

Margarine (softened): A substitute for butter in this recipe, margarine adds richness and helps create a tender crumb in the oatmeal topping. If you prefer to use butter, that works too!

Rolled Oats: The star of the topping! These provide a delightful contrast in texture with the soft date filling. They also contribute a nutty flavor and a satisfying chew.

All-Purpose Flour: The workhorse ingredient, flour provides the structure and body for the crumbly oatmeal topping.

Brown Sugar: This adds sweetness and depth of flavor to the oatmeal topping. The brown sugar’s molasses content also contributes to a slightly chewier texture.

Baking Soda: A leavening agent, baking soda helps the oatmeal topping rise slightly during baking, creating a lighter and airier texture.

How to store

These delectable Matrimonial Cakes, also known as date squares, are perfect for whipping up a batch to enjoy or share. But what if you end up with a surplus? Not to worry! Here are some tips on how to store your date squares to ensure they stay fresh and delicious:

Cooling Down:

  • Allow your freshly baked date squares to cool completely on a wire rack before storing them. This prevents them from becoming soggy or losing their crisp oatmeal topping.

Airtight is the Way to Go:

  • Choose an airtight container for storage. This will prevent the squares from drying out or absorbing any unwanted flavors. Consider glass containers, ceramic containers with tight-fitting lids, or reusable silicone storage bags.
  • Short-Term Storage (Up to 3 Days): For short-term storage, you can keep your date squares at room temperature. The airtight container will ensure they stay fresh. A cool, dry pantry is the ideal spot.
  • Extended Storage (Up to a Week): For longer storage, consider refrigerating the squares. The cooler temperature will slow down the staling process and keep them fresher for a longer period.
  • Freezing for Long-Term Storage (Up to Several Months): Want to enjoy your date squares well into the future? They freeze beautifully! Let the squares cool completely. Then, individually wrap each square in plastic wrap or parchment paper for added protection. Place the wrapped squares in a single layer on a baking sheet and freeze for about an hour. Once frozen solid, transfer them to a freezer-safe container or bag. Properly stored, date squares can last for several months in the freezer.

Substitutions/Alterations

  • Margarine: Don’t have margarine? No worries! You can use unsalted butter in its place with a 1:1 ratio.
  • Rolled Oats: While rolled oats are the classic choice, you can experiment with other types of oats. Quick oats will create a slightly denser texture, while steel-cut oats will offer a bit more bite.
  • Brown Sugar: If you only have white sugar on hand, you can use it in a pinch. However, brown sugar adds a deeper molasses flavor and a touch of moisture, so the squares may be slightly drier with white sugar alone. You can always add a table spoon of molasses to the white sugar to make a brown sugar if you have no brown sugar on hand.
  • Dates: Don’t love dates? Explore other dried fruit options! Chopped dried figs or apricots could work, although I haven’t tried these. Just be mindful of adjusting the sweetness depending on the dried fruit you choose.
  • Baking Soda: Baking soda is crucial for the rise of the oatmeal topping. If you don’t have any, you can’t simply omit it. However, in a pinch, you could try using an equal amount of baking powder, but keep in mind the flavor and texture might be slightly different.

Adding Your Personal Touch:

  • Spice it Up: Feel free to adjust the amount of cinnamon or nutmeg to your preference. You could even try adding a pinch of ginger or cardamom for a unique twist.
  • Nutty Addition: Want to add some extra crunch? Fold in chopped walnuts, pecans, or almonds into the oatmeal topping before baking.
  • Chocolate Drizzle: For a decadent touch, drizzle melted dark chocolate or caramel sauce over the cooled squares.

Equipment

  • mixing bowl
  • 9 inch Baking Pan
  • Rubber Spatula

Ingredients
  

  • 1 3/4 cup rolled oats
  • 1 cup flour
  • 1 cup brown sugar
  • 1 tsp. baking soda
  • salt just a pinch
  • 3/4 cup margarine or butter
  • 1 tsp. lemon juice
  • 2 cups dates pitted and chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan.
  • Fill saucepan with dates and fill with water until it is just covering the dates, about 1 cup. Add lemon juice. Cook on medium for about 15 minutes, stirring occasionally. Remove from heat and set aside for 5-10 minutes.
  • In a mixing bowl add rolled oats, flour, brown sugar, margarine, baking soda and pinch of salt.
  • Line baking pan with half of the rolled oat mixture and press down until it is packed. Add the dates mixture evenly over top of the oatmeal. Add the remaining oatmeal mixture over top of the dates.
  • Bake for at least 30 minutes, until sides are lightly browned on the top.
  • Let cool before cutting into squares.

Notes

  • You can adjust the amount of chopped dates to your preference.
