Ingredients
  

Crust

  • 1/2 cup butter melted
  • 2 1/2 cups graham wafers, crushed 2 packages (leave 2 crackers for top)

Center

  • 1/2 cup butter softened
  • 1 cups icing sugar sifted
  • 1/4 cup cream cheese
  • 1/2 can canned crushed pineapple drained well, about 5 oz.

Topping

  • 1 1/4 cup heavy whipping cream
  • 1/4 cup icing sugar
  • 1/2 can canned crushed pineapple drained well, about 5 oz.
  • 2 graham wafers crushed, sprinkled on the top

Instructions
 

  • Preheat your oven to 325 degrees F (163 degrees C).
  • In a large bowl, combine 2 1/2 cups of graham cracker crumbs with 1/2 cup of melted butter. Mix well until the crumbs are evenly coated. Note: I use a food processor to crush the wafers.
  • Press the crumb mixture firmly into the bottom of an 9×13 inch baking pan. You can use a spoon to ensure a compact crust.
  • Bake the crust for 15-20 minutes, or until lightly golden brown. Remove from the oven and let cool completely on a wire rack.
  • In a separate mixing bowl, cream together 1/2 cup softened butter and 1 cup of powdered sugar until light and fluffy.
  • Add the cream cheese and beat until smooth and well combined.
  • Add 1/2 can of the drained crushed pineapple to the mixture and stir until combined. Note: I also add 1 tbsp. of the pineapple liquid to this.
  • Spread the cream cheese mixture evenly over the cooled crust.
  • In a clean bowl, whip 10 ounces (about 1 1/4 cup) of heavy whipping cream until stiff peaks form. Add icing sugar and mix on low until just combined.
  • Gently fold the remaining 1/2 can of the crushed pineapple into the whipped cream using a rubber spatula. Be careful not to overmix, as you want to maintain some air in the whipped cream.
  • Spread the pineapple whipped cream mixture over the cream cheese layer.
  • To finish the dessert, sprinkle the top with about 2 crushed graham crackers, or about 1/4 cup.
  • Cover the pan with plastic wrap and refrigerate the pineapple dream slices for at least 2 hours, or until completely set. The dessert will slice and serve best when chilled. Note: You can also freeze.

Notes

  • For best results, ensure your cream is cold before whipping.
  • Make sure your cream cheese is softened at room temperature for at least 30 minutes before beating. This will ensure a smooth and creamy texture without any lumps.
  • For easier cutting and cleaner slices, refrigerate the dessert for at least 2 hours, or even overnight.
