Ingredients
  

Meatloaf Base

  • 1 tsp. butter for greasing loaf pan
  • 2 lb. lean ground beef
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 tbsp. Worcestershire sauce
  • 1 tsp . garlic powder
  • 1/2 tsp. thyme
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. smoked paprika
  • 1/4 cup jalapeno pepper chopped

Topping

  • 1 cup ketchup
  • 3 tbsp. Franks Red Hot Sauce
  • 1 tsp. cayenne pepper
  • 1/8 tsp. baking soda
  • 1 tbsp. brown sugar

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a loaf pan.
  • Add thawed ground beef to mixing bowl and add bread crumbs and egg. Note: If you don't have pre-made breadcrumbs, toast a slice of bread and pulse in a food processor until it resemble coarse crumbs. Mix until it is combined with the beef.
  • Add egg, Worcestershire sauce, garlic powder, thyme, salt, pepper, smoked paprika, and chopped jalapeno. Mix until combined.
  • Add mixture to loaf pan and press down until it well packed. Note: the loaf will condense in size while cooking.
  • In mixing bowl, add all the toppings together, mix with whisk until all combined. Pour over the top of the loaf until it is fully and evenly covered.
  • Cook for about 1 hour, until the temperature reaches about 160 degrees.
  • Let rest 10 minutes. Slice and serve. Enjoy!

Notes

  • For a milder spice, you can replace the jalapeno pepper for a bell pepper. 
  • You may replace the breadcrumbs with gluten free crumbs or panko. 
  • Food safety is important! The internal temperature for cooked meatloaf, should be 160°F. 
  • Spicy food often goes well with cooling or contrasting flavors. Some recommend side dishes that complement the spicy meatloaf: creamy mashed potatoes, a refreshing coleslaw, or roasted vegetables.
