Ingredients
  

  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 1 cup unsweetened chocolate
  • 1 tsp vanilla
  • 2 cups grated zucchini
  • 3 cups all purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup chopped walnuts (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease two loaf pans.
  • In a large bowl, whisk together the eggs and sugar until light and fluffy.
  • Add oil, melted chocolate, vanilla, and zucchini. Mix until combined.
  • Add in flour, salt, cinnamon, baking powder, and baking soda.
  • Fold in the walnuts (if using).
  • Pour the batter into the prepared loaf pans and spread evenly.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaves cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Let the loaves cool completely before slicing for cleaner cuts.
  • Consider pre-portioning your loaf before freezing. This way, you can thaw only what you need, reducing the risk of multiple freeze-thaw cycles that can affect the texture of the loaf.
